Do you think they started choreography with a shield before ditching it? Or did they just want the one handed look for the sake of coolness?
I think the Mountain's actor was definitely quick enough; there's plenty of shots where he swings the sword plenty fast enough and the kick and spear cut were both at least edited to show his bull rush briefly connecting. The issue in my opinion was that they had the actor use the longsword with one hand throughout most of the fight without giving him anything to do with his other hand. It made the swings and slashes awkward half the time, while the other half were good, and he did just fine whenever they had him use both hands. And the episode before he used both hands more often.

The Mountain in the books is described as being strong enough to wield a great sword with one hand, so that's probably why they went that route. I don't think he had a shield in the book that I remember. Oberyn did, but I don't believe the Mountain did.
And Iceman, the thing about the fight is, even in the book, it didn't look like Oberyn was facing an impossible task. He did beat the Mountain, but just like in the show, his own bravado was his undoing. Had he kept a more healthy respect of the Mountain's abilities, he wouldn't have died.
But, like you have said, I would have liked to see some more skill from the Mountain, and speed. If they had given him a lighter sword, (still a great sword, but just lighten in a lot) so he could maneuver it more quickly, that would have helped as well.

When I first saw that Tyrion/Jaime scene I thought the show would come under fire for making fun of people with special needs.
Also, there's another casting call up at io9:

Why is Varamyr only now being introduced? Also, young Cersei!?
The Mountain DID have a shield in the book. It was his standard shield, but repaired for the duel.
The producers threw both shields out, I imagine, to make the choreography easier to manage. I mean, how many of the "big" fights in the show HAVE included shields? Full army battles aside, I can't think of any.

That is odd, I mean I guess it makes sense. Book Spoilers below.
He was integral to a part of the Jon story in ASOS but by introducing him into the 5th season they may be using the prologue of book 5 as the opening scene for the fifth season. Now my I'm curious if we are gonna see him become a bigger role in the show and that maybe the show will be kinda showing us things we haven't seen in the book yet.
He could be in a Tormund/Styr role, or will be used to teach the audience more about warging.
They should have put the big red "Deceased" over peoples faces.
So is she going to be banging Littlefinger?
