Help for translating Grindhouse.

I'm doing subtitles for the Grindhouse movie (Tarantino/Rodriguez) and I have priblems with translating some sentences.

In Planet Terror, when the guy who owns the bar Go Go dance first appears, he says to one of the girls : "Roofer is the house" what does that mean ?!

What does mean "Every girls will have to check out with a finger and have a bye bye slip" ?
