i like this guy http://anklesnsocks.blogspot.com/ take on Galactus...
My basic idea is that he is sort of a void of power. Make him a more visual representation of the abstract concept. The hole in his chest is where he eats planets. Afterwards his body physically becomes whatever main element of that planet was. So if he eats a star, his body becomes fire.
Well, of course we got what we did in FF2 because they were saving his reveal for the Surfer solo movie, but regardless just make him look like Kirby's drawings. It's not that hard. If Transformers can work on screen, and they do, then Galactus can.
And it all comes back to how much you spend on him. You can't do these things just by perspective because he has to dwarf landscapes and you have to depict severe destruction, all costing serious money.

If we ever get the real Galactus, they need to stick to the Kirby design. That other take above lacks the power of Jack's original design. You can monkey with the color and details, but the overall looks still needs to be Kirby.
The Destroyer in this year's Thor movie proves that Jack's designs DO translate to the big screen. The Big G is no more outlandish than the robots in the Transformers movies, and we are up to our third one of those.
If it ain't broke, don't fix it - and Kirby's Galactus ain't broke!

Why can't this work on film? Is it any "goofier" than a man dressed in an American flag throwing a metal frisbee? Any more bizarre than an angry green giant? Does it require any more suspension of disbelief than an alternate dimension populated by Norse gods?
Galactus works. Fox was scared.

so how is the weak looking poor man's version above any better than Jack's? It's pretty much the same concept - a large humanoid in purple - but it lacks any of the power or grandeur of the original. If anything is "underwhelming" it's this thing.
I do not mind the tweak that John B. added to the character, the notion that his looks is derived from the race of beings that sees him, but other than that it's a pretty cool and solid design.
Again, the Transformers movies are full of characters that are basically the same thing design wise, and I have not heard any one complaining about them.
Galactus is an alien. Why are we afraid to have an alien being in a bizarre costume?
The difference is there's no human face to make it obviously human, only featureless head. My problem with the classic Galactus design is that even his herald Silver Surfer looks more alien than Galactus. I don't pretend to be a fan of the character, I am just offering my opinion as a viewer.
Let's have him look more like a damn alien and less like a man.

He looks human to other humans. He looks like a Skrull to other Skrulls. et cetera, et cetera, et cetera.
The ability to morph into a form that mimics a species gestalt is about as alien as you can get.

Be respectful to what Kirby intended with him. Here's Odin in the comics:

And here's the film version.

Different, but they work under a certain logic. If I may, I'd prefer they drop the whole notion of Galactus's appearance depending on who is perceiving him and emphasise armour containing an energy being.

A good designer can also look at the Celestials:
