If it's fat on the outside I trim it, but on the inside I just eat it. A good steak with a little bit of fat in it could be used for making it tender and moist.

problem with steak sandwiches is if the meat isn't perfect, you'll end up losing some teeth trying to chew through it. but they are yummy when done right, with some cheese, bacon and fried red onions.
