I get that WRT vinegar and chili, but pickling changes the taste and I've found that it can be quite good. Also, if I need to tone things down for weak of heart (or stomach), you can just add milk to their portion or give them a glass when they start to whine. I know it sounds disgusting, but it works. The sensation we perceive from peppers is due to capsaicin. It creates a burning that some people feel is unpleasant. Milk contains casein. It binds with capsaicin and helps to relieve the "pain". Anyway, it works.I have a bottle of Reaper powder that I’ve had for nearly three years and I keep refrigerated. It’s amazing on eggs and pizza and in soups and chili.

I’m a proponent of vinegar for cooking as well but not usually for chili. I add apple cider vinegar or malt vinegar to a ton of dishes.
I also love your meat ideas. I once had a friend who put sirloin cubes in his chili and it was a revelation.
And I will fight the urge to judge you on your dislike of ice cream. But that doesn’t seem natural.

Spaghetti?!?!? I live in California son. LOL. I generally put raw, diced onion and cheese. My wife loves sour cream on top.....which brings us to dairy. I freaking LOVE milk. I grew up on it and it was my main protein source (maybe that's what's wrong with me). My mom used to have to buy the 10 quart boxes of it and it would be gone in a couple of days. I drink it with chili also. My mom was of Mexican heritage (Dad Irish, but evidently had a thing for Latinas) and I grew up in that culture. So, with every chili relleno, enchilada, bowl of albondigas soup, etc., a glass of milk was always there. I totally get that it complements the taste. Some people think drinking milk is gross and I'll never, ever understand that. The real question is what do you top the Chili with? Cheese? Crackers? Spaghetti?
Myself, I am a cheese and crackers man. But growing up, my parents used to always add Spaghetti. I guess it is because of the proximity of Louisville, where I’m from, to Cincinnati. Cincinnati really takes their chili seriously and they do spaghetti in it as well as chocolate.
