If you have played the past God Of War titles I definitely recommend God Of War 3.
Haven't played any of the Uncharted titles but according to my friends it's extremely good.

Alot of people like Killzone 2, however I think that game is quite tedious and overrated. But it's not popular for nothing so you should maybe check that one out too.

My top PS3 games that aren't in every "best PS3 games" list are Yakuza 3, Demon's Souls, Valkyria Chronicles, and if you're into PSN games, Flower.

From the main pick, yeah the Uncharted series is the best thing on PS3 and needs to be owned by every PS3 gamer. God of War 3's the game that gets the most out of the box, Killzone 2's best for online, and inFamous is a tremendously fun open-world game.

Played GOW3, Uncharted, and inFamous. May have to give Fallout 3 a try. Are Fallouts 1 & 2 really important to understand #3?

Now...Fallout 3 is a game of its own and you dont have to play 1 or 2 to understand fallout 3

I recently got Borderlands, I'd recommend that. It's a FPS with RPG elements. You gain XP, level up, use skill points to earn new special abilities and keep finding weapons with better stats. It's pretty fun and gets quite addictive as you hunt for better loot. It also allows for up to 4 player co-op.

I just beat Shadows of the Damned, it's bound to be very cheap in like 2 weeks because it sold like **** but it's one of my favorite games on the system. It's like Resident Evil 4/Dead Space done by the Monty Python crew.

Can't forget LA Noire! This game definitely takes advantage of the video processor housed in the PS3. Extremely fun game.
