Making a twist for the sake of a twist rather than just good storytelling makes no sense. The Empire twist only works if you watch the OT first. It is not a twist when you watch in episode order.
It makes the most sense to tell one big story that starts with Episode One. The logical through line is Skywalker. The PT is Anakin's story, the OT is Luke's story, and the ST will be Rey's story. Rey being of Skywalker lineage is most logical. She could be Leia's, but given Han and Leia's reactions, I doubt that. That leaves Luke. It makes for a powerful story to have a father train his child.
Plus, I like the idea of Anakin's suppose to be the Chosen One and restore balance. He has twins and one child has a dark Skywalker (Leia has Ben) and the other has a light Skywalker (Luke has Rey). Also interesting that the daughter had a son and the son had a daughter.
Then together, Rey (light) and Ben/Kylo (dark) defeat Snoke and restore balance to the Force. Maybe an Inside Out thing where you need both the light and the dark.
And if Luke is the father, Rey's mom would be the mystery/twist. This is where Kenobi can come in for those wanting it.
Maybe Obi-Wan meets someone during his time on Tatooine. Something happens that causes the mom & daughter to leave (Obi-Wan avoiding attachment while watching over Luke). Then after ROTJ, Luke looks to train new Jedi, so Obi-Wan's spirit leads Luke to Obi-Wan's daughter. Luke trains her, they fall in love, and have Rey. Rey becomes more powerful then Ben, being the offspring of two Force sensitive parents.
Just an idea. But I'm fully in Rey is Luke's daughter camp.
