in gladiator they replaced an actor who had died during filming with a digital double for his final scene of the movie - i forget the details but he's the old guy who let mr. gladiator out of a cell if i remember correctly
and if you're worried about the on-screen actor looking older...just look at what they did with the two old guys at the beginning of X3 - they both looked 20 years younger thanks to computer effects...i say the real worry about elderly actors is not that their characters age, but that the actors might have a shorten career ahead of them...richard harris left us with a second-rate dumbledore after he passed away IMO and the Oracle in the Matrix caused them to add a whole extra subplot to account for the change in actress playing her
