I my humble opinion, the best kind of fanfic is usually the ones written in worlds or universes with a ton of leeway. Take for example the Star Wars franchise. That production Bible is being re-written every other day with every new publishing of a comic, novel or short story.
Want a race of two-headed polygamists? The writer creates the planet of 2-headed Polygamists, including histories, cultures and other details.
Want a battle to have taken part during the Clone Wars to eradicate the 2-headed Polygamists? Sure, no problem. They won't be missed.
Take Warhammer 40,000 as another example: every edition of the core rule book gets changed with new fan-wank subfactions with detailed history.
Original characters get the brunt of it. No one seems to appreciate OCs doing things cooler than established characters. Then again, we feel the same way about new characters every now and then.
I tried my hand at writing original Fantasy after playing Prince of Persia Warrior Within, had a very Middle-Eastern, reverse-Conan theme about a King/Caliph who inherited his throne young whilst his kingdom was falling apart. He takes it upon himself to push out the invaders, unite the tribes and undo the mistakes of his father only to have the tribal heads pressure him into another War of Reprisal against the invaders where he eventually get tired of the killing, the responsibility of rule and losing all he cares for.
The story was met with little if no enthusiasm about a tan-looking "Arabic" sounding character and essentially I dumped it and worked on a couple of art write-ups for my artist friends.
Writing is ALWAYS a fan-******* process, even if the fan is just you. When you put pen to paper you've already made up your mind and stance towards the subject.
