The idea that you can't be healthy without meat in your diet is ridiculous. There are lots of other sources of protein (beans, nuts, lentils), plus you're not eating all the other crap that gets pumped into mass-produced meats.
I'm not a full vegetarian (I can't because of some other health complications). But I really limit my intake of red meats and chicken. I try to only eat it once a week-or never if possible. The rest of the time I stick to fish and high protein alternatives. I also limit my dairy intake and supplement with vitamins as needed.
I just feel a lot better without a lot of meat in my diet. Not as heavy, better skin, etc. I do love animals, and I prefer to eat meats that were produced sustainably and locally, but I've never really had any qualms about eating animals in other respects. Also, I do like steak occasionally. I'm not willing to give it totally up
Cash, some of my fav's are Eggplant lasagna (you can google recipes for it with cheese or without cheese depending on your preference), Meat-free fajitas (lots of red and yellow peppers, onions, homemade guac and pico de gallo, and refried black beans), black bean soup with veggies (you can buy it prepackaged or make your own in a slow cooker), veggie chilli (again, you can buy it or make it in a slow cooker), hummus, and Falafel.
