Artists renditions published by Marvel are not copyrighted by the artist as they don't own the characters in question, so anyone's version of the Thing down the years is available for Fox to play with, be it Kirby, Buscema, Byrne, Wieringo, Hitch, etc etc.
They picked this design because that's what they wanted, end of story.

Exactly. I'm good with the bust, but the poster has a very different face. I hope it's just the angle, but I'm afraid they changed the design in the wrong direction.

My real fear is this isn't just a bad angle. My fear is that people associated with the film looked at the design in the original bust and said: "This doesn't look like rock. This looks more like rocky plates. Let's make it lumpier and less regular so it looks more like rock."
The problem with that, as you and I know, is that Ben has always been depicted with rocky plates and not lumpy rocks.
We knew when we saw the bust that it might not be the final design. They could have tweaked it toward the comics and made it better, or they could have tweaked it away from the comics and made it worse. I'm afraid we now have evidence they did the latter.
