I'm in culinary school and the eclairs will be served at the American Culinary Federation meeting. My instructor said that the plan is to serve food that seems normal but modernized. Last week in the baking class I made a carrot torte with a Bavarian cream cheese filling with orange zest and topped with a white chocolate carrot puree mousse. Usual eclairs are filled with Bavarian cream and topped with chocolate. Those are filled with passion fruit cream and topped with poured fondant, so it's going to be a lot sweeter than your usual eclair. And more fondant will be put on the eclairs to fully cover the tops, so maybe people won't think they look like chicken nuggets.
