To me, the *number* of villains a hero (or hero team) faces isn't as much of a problem as the number of subplots tied in. For instance, a Spidey movie featuring the Sinister Six would work just fine, because even though you've got six villains, they're a team and they're all working towards the same goal (kicking Spidey's ass). Whereas in Spidey 3, you get 3 villains (Sandman, Venom, and New Goblin) who have very different subplots and story arcs, and Raimi just jammed them awkwardly together in a mishmash that made no sense.
