You never pair 'why' and 'Joker' in the same sentence.

What was the purpose of the Joker hanging out the back of the cop car after he escaped from Jail, and who was driving the car?
 
Lau ratted on all his clients, remember? He made a deal to sell out his mob clients in exchange for immunity from prosecution and a plane ticket back to Hong Kong. That's why there was all those arrests.

Joker was most likely making an example of him to show what happens to those who double cross their colleagues.

3. Probably one of his accomplice who was jailed with him. (not the fat man with the cell phone in his belly though because by then he is in several different places at the same time:hehe:).

I love how they call the Joker "the clown".

I love that too. There's something about how he says it that makes them underestimate Joker. But there's something about how he says, it. It's hear dto explain. And you can't help but wonder what he's doing at the time. He's probably thinking, "I told you so."
 
Which reminds me, when Bats was in Hong Kong, what do you think The Joker was doing?
 
Because Lau was gonna testify against the mob, be granted full immunity, and then leave back to Hong Kong with all of the mob's money. The mob would have killed him anyways, so why not do something cool like, say, setting him on fire atop a giant pile of the money which he loved so much.

OK, we get why he killed Gambol (the price on his head), we get why he killed Brian Douglas (to show Gotham what he's about), but I still don't get why Joker killed Lau, maybe I'm missing something. Any thoughts?

Yes, you are missing something....the entire film. The whole point of the Joker is that he does these things for the sport of it.

What a stupid question. Thats like asking why was there a dramatic panning shot of the patrol boat traveling down the river in Apocalypse Now.

That shot of Joker hanging out of the cop car has gotta go down in cinema history, the definition of ICONIC.
