The vietman/war vet is an important part of Frank's character, but there's really no need to spend 30 mins of a film on it. It's not like you won't understand his character unless you visually see him go through a war.
I think they're doing the right thing with this movie by starting it where he's already The Punisher and showing the family murder through flashbacks. They can mention that he was a soldier in passing and that's more than enough, IMO.
