You also have to remember that Marvel's editorial department is in a perennial "teenager" mode in that they are willing to compromise their core ideals in order to "look cool" to a mainstream that will never accept them. They may want Hulk to seem more viscious and murderous to appeal to "new fans", although "new fans" are an optical illusion as most people who aren't interested in comics find entertainment elsewhere, and those that are have a clear idea of what characters should be as they'd read 'em so long.
Marvel's that kid in the corner, wearing black leather, piercings, and a few rub-on tattooes, in order to be "one of the cool kids". They lack the maturity to go, "yeah, we do superheroes, and that entails some suspensions and some non-realism at moments, but damn it, that is who I am and I love superheroes!"
