You're exaggerating Craig's features. Watch Layer Cake. In no way was he a cockney thug in that. He was full on Bond-like. The fact that he CAN play both that kind of role and a cockney thug is a testament to his acting skill and talent. He didn't look very rough in that either, if they dressed him up a bit more he'd pass for Bond pretty easily. Though in a way, yes, the book Bond is a bit more "thuggish" than the movie bond. Chain smoker, womanizer, scrapper, etc. I can't even imagine Brosnan convincingly taking the beating that Bond does in CR. Craig's shown that he can. The guy actually looks like he's been through some beatings in real life.
