I don't think they will follow strictly the book canon, as they've already done by now. But certainly you have a point on that.
Well, I don't understand why you are irritated, I don't think he gives away much about the plot, basically he shares his wish and his plans to pay tribute to the books and films and generally Thomas Harris' "world" of which he is a great fan and he has said he was a student of Thomas Harris (I don't know what he means by that, but whatever). Basically the information he gives out is about characters and storylines based on the books and/or films, so it's nothing new.
And IMO, it's a very clever way of promotion, every Thursday before every episode is on air he answers questions of fans on twitter. Only then (and in one particular interview) he "spills the beans", but again, he chooses what to answer. And all this helps building up anticipation among eager fans, mainly those who already love the "Lecter world" and have read the novels etc. It's a good thing to have fans waiting for something to happen, something they have seen before and are curious to see how it will be interpreted in Fuller's world.
Believe me, this is how I feel, me, a hardcore Lecter fan since I first watched SOTL, and now I wait every Thursday to see if he mentions something interesting about the show. And I swear, I don't feel that I've been spoiled to any big secrets about the plot, I don't have a clue what he has in mind! But I am eagerly awaiting to see, and I can only wish he gets the chance to fulfill his intentions, provided it's worthy.
