The Ancient One wins. She has attacks that do not rely solely on physical power ( as the Hulk found out) and she is a more powerful and experienced sorcerer than Dr Strange.
She would immediately transfer the fight to the mirror Dimension, bend space and matter to completely confuse Thor, portal away Stormbreaker and turn him into a banana slug.....or something like that.
She also has access to Dark Dimension power, something Strange didn't have and is far more ruthless than Strange ( she doesn't have a hippocratic oath to give her any ethical qualms about killing opponents, which she does with Kaecillius' acolytes).
The AO also carried the time stone, and if she's got that then this one is over before it starts.
People on this thread seem to have a view that sheer might always prevails -it often does, but not always, and we can find plenty of examples where a more powerful MCU character is defeated by a weaker one or a character who doesn't rely on pure physical might. There's almost no way that someone like Daredevil or Hawkeye could beat Stormbreaker Thor, but this isn't one of those contests.
Is Thor much much more physically powerful than AO, absolutely and if she engages in hand to hand, with weapons or not, or even a battle of spell power against Thor's lightning she's probably dead meat.
However, she's way too smart for that, and while Thor is skillful in battle he's not that smart.....otherwise he would have gone for the head.
Given her immense variety of powers and smarts I give AO this fight 8/10 times and Thor 2/10.
I happen to be a UC Santa Cruz alumnus and know first hand how ferocious an angered Banana Slug can be. If she were to use that spell, it would be her last.

GR's attacks can be both physical and spiritual ( the penance stare)....the GR hellfire cycle can do a lot of crazy stuff- so Thor might not have as much of a mobility advantage as usual.
Hard to say (we've seen GR survive being impaled but not full blown decapitation or anything like that) but this version of Thor doesn't have Stormbreaker anyway.It's unclear whether Stormbreaker could actually kill GR - although I suspect it could temporarily harm him

Surtur fulfilled his prophecy and blew himself up in satisfaction along with Asgard. Unless he survived and is now chilling out somewhere waiting for another prophecy to come along - probably playing sudoku or catching up on Netflix shows.

- MCU Ghost Rider survived a nuke (although the explosion was off screen so he may have been KO'd), shrugged off being impaled multiple times and lethal radiation and was completely unharmed by Quake's shockwaves and Aida's electricity blasts.
- Classic MCU Thor (AKA pre-Ragnarok with Mjolnir) survived the explosion that disintegrated Sokovia and has taken hits from Ultron, Hulk and Reality Stone Malekith and walked away with only cuts and bruises. He survived Surtur's flames (although he did partially deflect them with Mjolnir) and he was completely unharmed by 400% Iron Man. He did get beaten half to death by Kurse though.
By feats, there's no evidence Ghost Rider hits as hard as reality stone Malekith/Hulk/Ultron, never mind Kurse so Thor should be able to tank GR's attacks.
- MCU Ghost Rider easily destroyed bulletproof Life Model Decoys, including Aida even after she'd replicated the powers of various inhumans. He punched his way out of a SHIELD containment cell which we're told shouldn't be possible. Jeffrey Mace (Director of SHIELD/super soldier) survived a beating from him but he may have been holding back since Mace didn't deserve to die.
- Classic MCU Thor could charge Mjolnir with lightning and hit hard enough to destroy Sokovia and the Frost Giant palace. He's killed multiple Chitauri leviathans with one lightning blast, his hits with Mjolnir have staggered/ragdolled Hulk and reality stone Malekith and destroyed Surtur.
Meanwhile Thor is a heavy hitter but I'm not sure he's powerful enough to KO someone who survived a nuke.
The MCU Ghost Rider (Robbie Reyes) drives a Dodge Charger and we've never seen him use the penance stare. Which version are you thinking of?

There are a number of very staunch Thor fans around who seem pretty tough to convince that Thor could lose a fight against anyone under any circumstances, ever.
