I know about all of this I'm just personally not a fan of the prequel/expanded universe form of lightsaber combat. Lets be honest for a moment, Obi-Wan and Vader didn't fight the way they did because Lucas planned it, it was because they were an old man and a clumsy giant in a bulky suit, and at the time Lucas thought the lightsaber should be very heavy.
The way I think of it is that the Jedi really shouldn't use their lightsabers very often because it's cooler when they don't and because the force is so awesome they don't need them. Empire pretty clearly demonstrates that an average joe with a blaster is no match someone trained in the force even unarmed, when Han attempts to shoot at Vader.
I like the heavily Choreographed fights too to some degree they're cool in their own merit they just feel so much less personal. Not to mention this is supposed to be a life and death situation, it's not like anyone would use all these fancy maneuvers in these circumstances.
