I think it is a mouse, but I'm not 100% sure. It made a nest out of my kitchen towels which made me mad. I threw them out and I bleached pretty much the entire kitchen. Cleaned all droppings. I can't find its food source. I checked all my food and nothing appears to be nibble on.

Mice have a pretty wide diet. Grains, fruits, meat, and bugs. If it's not getting into your food it may be eating bugs in the walls or ceiling space.

Just because the cancelled the show doesnt mean he cant appear in the other Marvel shows. No need to kill the character or disappear him.

I think everything that so far has occured in the Netflix MCU has been pre-snap.

The problem I think they have is acknowledging the snap in the various series means at some point acknowledging they are still in the MCU and the MCU has completely ignored anything since the first episode of SHIELD so the connection is very one way there. We never see or hear references to Spider-Man for instance and he's in New York with the rest of the Defenders members. There has been virtually nothing of any mention of all the Avengers members either, not even a throw away line about how Civil War went down with Cap and Stark. Nothing about the Accords either.

Nope. I think the series are in the 2014-2015 era but that's just a guess.
