My favorite lines/exchanges in each film:

Spider-man:
Peter Parker: This is my gift, my curse. Who am I? I'm Spider-man.

Spider-man 2:

Dock Ock:You're getting on my nerves.
Spider-man: I have a knack for that.
Doc Ock: Not anymore.

Spider-man 3:

Harry: Pete! Up top!
Mary Jane: AHHHHH!!!!
(Spider-man and Harry on Sky Stick)
Spider-man: Mary Jane! ........... (to Harry) This thing got any more?
Harry: Hang on!
Spider-man: To what?!?
Harry: Go buddy!
Spider-man: Got her!

It's not so much a line, but one of my favorite moments out of all 3 movies was in the first one, when Harry's talking to MJ on the phone after the first Goblin attack at the Unity Day Festival:
"What do you mean 'he's incredible?'"
(Peter, in the background, peeks his head around Harry's, as if to say, "Yea, I'm a bad-ass"). Such a classic moment that personifies Peter Parker's growing confidence at that time.

then there are others:

then on the field trip when Harry talks to MJ and she says the spiders are disgusting or something. Then Harry says he hates them. MJ replies how she loves them, then Harry says "Yeah, me too." Haha. Good stuff.
