Maybe you have seen it but the 'making of' the prequels behind the scenes really gives a lot of insight. For example Hayden Christiansen asking for advice on how to act in a scene and George casually explaining "just say it angrily" or something to that effect. One interesting thing about Rey's reshoot wig is that it corresponds to scenes that directly reference her Palpatine ancestry. Chatting with Finn on Kijimi and the Falcon, her confrontation with Kylo in the hanger and certain close-ups on Endor. I think it was also used during certain moments on Passanna when talking about the Sith dagger and her "dark" moments.
Makes me wonder if making her a Palpatine was a late addition. It certainly fits with Darth's theory that she was originally intended to be Ben's sister. Is there any concrete evidence for that or just an educated guess?

1. Rey being Palatine's daughter
This one was more just a inquiry as I just never pegged Palpatine as having any sort of relationship. Is that something that is ever touched on in other star wars media? And if so do we have any idea who he had a child with?
2. Why does she refer to herself as a Skywalker at the end?
Maybe I just missed something here but I didn't really get that bit, granted I know she's probably not gonna want to say "Im a Palpatine" with a big smile on her face but she isn't a Skywalker right?
3. The whole Rey/Kylo being able to interact with each other surroundings during a vision
Think I have my own answer to this one but just wasn't sure if this was explained by them having that force connection being the reason.

The Star Wars mythology is so rich that they could have picked anyone else as new main villain for this trilogy. However, that would have required some originality which is something we know that the folks in charge sorely lacked.
Fixed #1 for you. I'm not sure about your actual question, though. The actor who played her father is 30 and Daisy is 27 and was 23 when The Force Awakens came out. That would put the birth of Palpatine's son prior to any events of the original trilogy.
