They showed their rescue and adoption because it happened in the book and season 1 stayed close to the book. And the farewell scene was shown to explain why the wolf was gone and why Lady would be getting the axe. But they have since dropped all of the Arya Nymeria stuff. They clearly do not care about the Arya Nymeria relationship.
The only thing the direwolves are there to do now is to signify loss. Nymeria signified loss when she was sent away. They won't bring back a budget sucking direwolf when that direwolf's role in the shiw was finished 5 seasons ago. They barely want to spend the time and budget on Ghost. They didn't even feature him in the Battle for Winterfell, because they needed to use that budget for the three dragons. Do you really think they are going to take away more budget for a second direwolf? No,Ghost is the only direwolf that you will be seeing, and he will probably die before the end so they can dedicate more of the vfx budget to the dragons.
They used real dogs for all the Direwolves in season 1, but they ditched that method because no normal dog can grow to the size of a small horse or be utilised in action sequences that the story requires. If Nymeria were to return, she'd be CGI.
Ghost isn't the size of a horse in this show, not even close.

Tyrion seemed uncharacteristically butt hurt over Theon being mean to him. I thought he generally didn't give a **** about people trying to hurt him unless it's family trying to do it. Wear what you are Jon Snow and no one can hurt you and all that.
