In this article, Rebecca Hall also says that they shot more stuff on the hollow earth set piece than what was in the film. Watching it, it definitely felt like this movie was shredded in post but now reading about all these cut scenes and actors confirms it. I don’t think an extended cut will help though.

@Schlosser85 said, they did achieve that in the Gareth Edwards movie. The monsters in that movie moved slow and restrained like they weighed as heavy as they were big. So it’s not about CG vs practical. It’s about utilising CGI the right way.
I don’t even necessarily mind fast moving kaiju and mech like here or Pacific Rim: Uprising. It works both ways in different kinds of anime depending on the tone and rules of the universe. It’s just that they don’t fit in these two specific examples because of what has already been established in the preceding installments.
