Well, thats the thing-- allow me to play devil's advocate. When you look at X-Men from the prism of what's been done before, the O5 start to make more sense, because it's the only thing that hasn't been done. Now normally, it would make sense to go with a blended lineup (as the Avengers did), but as you said, Fox has already done it, multiple times. We've seen many composite lineups but we've never seen the O5.
Regarding diversity, many of these elements are already sort of baked into the framework of the team. Beast and Angel are technically non-human passing, so you could explore similar themes with them. Racially & culturally speaking, the O5 are a blank slate, which leaves a lot of room for interpretation, much like the Eternals. Feige can make the O5 his own, in a way he can't really do with the others, without radically changing what they are. He has complete freedom.
Jean being the only woman is problematic, and I agree, so make her the leader (like X-Men: Blue did). Not only does it center her, and make her the voice of the team, but it also sets up an amazing arc for Scott as he tries to find his. Contrary to popular belief, Scott Summers does not start off as a badass commando figure, and I'd argue it isn't even the core of who he is.
Much like Steve Rogers, Scott started from a much more humble position. He was a shy young man with social anxiety & trust issues, who didn't quite know how to express himself. Jean sort of brought him out of his shell.
A lot of good points here. I think at the very least, if we do get the O5, it will be the O5 plus Storm, because I don't see them excluding her and with a few tweaks that makes for a diverse and modern team.
