Is the run of Wonder Woman comics where Donna Troy took over the mantle available in trade paperback form? If so, is it worth reading? Or the books detailing Hippolyta's adventures as Wonder Woman after Diana [temporarily] died?

As far as I know, Donna only took over as Wonder Woman off-panel between Infinite Crisis and One Year Later. The end of her tenure is shown in the trade "Who Is Wonder Woman?"

And I've never seen any Wonder Woman trades listed that collect the issues where Polly was Wonder Woman.

No, considering Her name is actually Diana, not Wonder Woman. That's just what people call her. It's a title, not a name. And even if it was her actual name it doesn't matter. Anybody can be a legacy character. All it requires is for the previous one to die or retire and somebody else taking over the name and continuing the legacy.

That's like asking how somebody can take over the Flash or Batman mantles.

The general public might never know it's a new Flash or Batman since you can't see their face. Does the general public know Diana is Wonder Woman?

They did. I don't know whats going on these days.

Still, it's just a title. Just like if Supes dies and Conner takes over the mantel of Superman.

I don't think people would ever give the name Superman/Wonder Woman to anyone else. It's like "The People's Princess" was and always will be Diana, Princess of Wales. Superman/Wonder Woman would always go with the faces.

Batman/Flash and other masked heroes are more icons that anyone can be under the masks. Only the friends of the heroes and maybe the rogues gallery would ever really know there was a difference.

I get the impression that Diana is the spitting image of her mom Hippolyta in the same way some women do grow up to look almost exactly like their mothers.

Donna is literally Diana's magically created duplicate.

That's a good excuse for the first reboot.....not so much for the other two.

Marvels got just as much and never resorted to this gimmick.....yet.

But Diana growing up to look like Hippolyta kind of makes sense. She molded Diana from clay, so it's not like Diana had unique genes to determine what she should look like. The gods probably figured, "Eh, just make her look like her mom," when they gave Diana life.
