I never took Palpatine's words as a sign that they wanted to train new Sith warriors, which he could potentially have done even before his rise to power. 
 
Rather, he simply means that through him and Vader, the Sith now rule the galaxy. 
 
Actually I don't remember him saying anything close to "the Sith will rise again".

Yep, agreed. I also really liked the first game on N64, and a few of the missions from Rebel Strike, the third installment (the attack on the Executor is always a thrill).
 
I also have a soft spot for Bounty Hunter, which was poorly executed but gave me the opportunity to play as Jango Fett, one of my favourite characters.
 
Other than that, Battlefront is of course a reference, and I don't mind the two Force Unleashed games if you can forget how short they are and how inconsistent their scripts are compared to the movies.

I also gave in and ordered my Blu-Rays, which I should receive today or tomorrow at the latest. The only reason I did it is because of all the extra features, I'm a sucker for those, and I can't wait to watch all those OT deleted scenes.
