One complaint I have about the finale is how

As much as I love them two, it still bothered me.

People seem deadset on believing that LS is cut without considering that after book 3 things get a bit thin.
Seems like many have a habit of speaking with an air of definitive authority, like when it was confirmed Coldhands would appear this season from what was seen in a trailer.

I was one of those who were completely wrong about Coldhands appearing. I also said LS was cut entirely immediately after viewing the finale, but some other members have shown me the folly of that viewpoint as well.

I always assumed Varys never left KL, that he was just hiding with the walls and passageways that were hidden through the Red Keep and Maegor's holdfast.

It makes more sense that Varys would leave his "little birds" to do the spying while he is off doing more productive things. I just can't see him spending months in the walls. That isn't to say he didn't pop in and out of the Keep occasionally. He could get in and out of King's Landing and the Keep without anyone knowing if he wanted to.

I really wish they would have had Tyrion in the show say something along the lines of, "so this is how Varys and his "little birds" spy on everyone." Those tunnels Tyrion and Jaime go through are a pretty big revelation in the books. Imo anyways.

Not hating, I know how easy it is to jump to conclusions when invested in something.
It's just brutal we have about a year to wait for our answers!

As for LS not having much of a role in the books, we need to keep in mind that D&D know where everything is headed.

Yep. D&D have said that GRRM told them where everything is going and the ending. GRRM has confirmed this too. It's in a couple interviews with the three of them.

Why? I think it's for the best. Now they know what's important and what's not so they don't waste time on unnecessary stuff and gloss over important stuff.

Well, because I don't want twenty plus years of GRRM's work to be summed up in three more seasons. I don't want what he's writing and spending all of this time writing, to be all for nothing. I'd much rather wait and read everything from the books and then watch the show.

But why does knowing he told them the ending mean his writing is all for nothing?

I understand wanting to read it before watching it, but the rest of your post doesn't really make sense to me. The show existing doesn't make his writing all for nothing nor does it lessen it. And this is an adaption. His books were always going to be summed up in a finite reasonable number of seasons. D&D don't want this be the only thing or the last thing they do with their lives so they were always going to do it in a reasonable amount of seasons. They felt 80 hours (8 seasons) was a good length to tell an epic story. Their words not mine.

The sad fact is that this was inevitable the moment this show was announced. George just doesn't write fast enough to stay ahead of the show. He never had a snowball's chance in hell of getting the final book out (which may be book 8 based on his editors recent interview) before the show ends. The show was always going to outpace him and reach the end before him. Now a responsible writer would realize his error and try to write faster, but not George. Oh no, this man will pudder on like grandma on her way home from Sunday service. Speed limits and deadlines are nothing to her. She moves at her own speed and the forty cars behind her cursing her and blaring the horn don't mean a damn thing to her.

Well, 8 seasons, not 7. Can't stress that enough, also George did come out and say after his editor gave that interview that it is still his goal to end it on seven books.

Say that they get the majority of AFFC/ADWD done by the end of season 5 with some bits of WoW included as well then that gives them three seasons to do two ASOS length novels. I think it'll be tight, but it's potentially doable.

If there's anything to complain of it's how D&D will handle the character journeys, because their record is pretty spotty IMO.
