I don't think Kinberg had his eyes set on directing only x-men movies either, obviously. It is saying a lot when he's named as one of the highest paid screenwriters and producers in Hollywood (just last year he was named Hollywood's top genre producers). He's done a lot of networking. People like to branch out. Try new things. Have new experiences. That's what life's about. We'll see how good he is when the film releases. Directors also get better by learning on each film (Theoretically. Singer didn't seem to learn with Apocyaplse).
