Looking at the 'after' photo, I'd say that scene isn't CGI. There seems to be a lot of Dain that is though.

Unlike Connery, Christopher Plummer actualy seemed to understand the plot of Lord of the Rings. Connery now regrets not having taken the role due to how much money those films got.

No. In the interview, Plummer says he was a fan of LOTR but what kept him from taking on the role was the long shoot in New Zealand.
I think Plummer would have made for a good Gandalf, but it's impossible to imagine anyone but McKellen in the role now.
