From what I saw, it looked like she was going to die no matter what, whether Spidey tried to stop the fall or not.
It looked to me that the web caught her just in time before hitting the ground, but the sudden stop made her head swing back and hit the ground. Spidey prevented a splatter, if anything.
Also with people debating on whether Gwen's head should be bleeding or not: It's a PG-13 movie. A PG-13 Spider-Man movie, no less. They wouldn't show ALL of the gruesome details, so I believe that whether she'd be bleeding or not is a red herring over trying to figure out how she died.
